Something New...

Hey Blog Fans!

Matt and I are starting something new. Meal Planning. I know a few people that do it and they save it saves them a lot of money and headache. Oh the dread... I never have meat defrosted for what I want to make, or I am missing something. Blerg!

I've been all of the interwebs reading and researching how people do their meal planning. Here are a few helpful sites I found:

Menu Planning 101- Good Overview of what Menu Planning is...
OrgJunkie Meal Planning Template- This is the template I used to make my own.
Printable Meal Planning Template- Cute freebie to print out and laminate to write on and wipe off
Real Simple- Love this magazine, they had lots about meal planning

Look for it on my new weekly installment Meal Plan Monday (I promise to be better at this Sarah!)

So look for a new feature tomorrow... Meal Plan Monday. I am going to do it, or at least try it for awhile.

Simply Saturday...

Saturdays are wonderful. Especially Saturdays when we have nothing really planned. We got up around 9:45 and had waffles (my fav). Then after relaxing and ordering some books online from the library (love that) I decided to make something in my new crockpot.

As some of you might know, I ordered a new crockpot online last week. It is one with a timer! I love that! You set the time and when it reaches that time it turned to low. Perfect! So what I decided to make was homemade applesauce since I had a whole bag of apples that needed be used.

So I found a recipe here: http://www.barbarabakes.com/2009/10/crockpot-applesauce.html

Pretty picture from the website...

Sadly, I didn't have 5 of each type, I had 10 Gala, so that is what I went with. I will let you know how it turns out...

Right now we are a little more than an hour in to the cooking time and the house smells fantastic! Come on applesauce!

UPDATE!

Homemade Applesauce = Delicious!
Funny how Dad showed up at just the time it was complete... haha! I also got to use my most awesome $3.00 purchase from the Thift Store, an emulsion blender. It came with all the parts, instruction book, and the plastic was still on everything, including the little twist tie on the cord! Mega find! Worked great too!

Anyways, I was half way through my little ramekin when I realized I should take a picture, so here is a not so good iPhone pic.

Friday Friend 28

This week's Friday Friend is a very dear neighbor to me...

Pelican's SnoBalls & Homemade IceCream

You can't get any better than a SnoBall from Pelican's! I never go past Pelican's that I don't stop for at least a small Watermelon SnoBall. For those of you unfamiliar with what a SnoBall is, think of a Snowcone but super smooth, not grainy. Other names for SnoBalls are Hawaiian Shaved Ice and Italian Ice.

But let me tell you what Pelican's in Apex also serves... Homemade Ice Cream (for real homemade). I can tell you from experience that the Carrot Cake is banging! They put a WHOLE carrot cake in 5 gallons of ice cream... whoa.

Currently the Apex location is running on winter hours: Fri-Sun: 2pm-8pm

Catch Up...

So I realized that I have had some crafty pics that I haven't gotten around to uploading, mostly because they were gifts and I didn't want to ruin a surprise!

Made these little fellows for 2 teachers at school having little boys...

Are they not the cutest thing you've ever seen?!

Diaper Wreath I made for Amy's baby shower.

A couple of quilts: The first one is a t-shirt quilt made of vacation shirts that a lady at work has collected over the years. The second is a SUPER cute baseball quilt made for a friend having a little boy.

These 3 quilts were an order for Christmas. Can you tell that I am into stripes right now? Love how clean they look. The middle one is backed with University of Tennessee fabric.

If you want to read more details about the quilts, check out my quilting blog http://www.courtneyquilts.blogspot.com/

Whew, I think that is just about everything... now I can clean off the camera card!

I Love Blogs :)

I love blogs. Writing them, reading them, bookmarking them, commenting on them, etc, etc, etc! Matt reads books, I read blogs. They are full of such wonderful ideas!

Down the right hand side of our blog is a blog roll of the blogs I check daily... yes all of those :) Actually, I have added more to my blog roll bookmark folder... so many.

Which has had me worrying, what if I was to loose them? What would I do! I have got to do better about backing them up... Now I can do that a million times easier thanks to Google Bookmarks little toolbar link.

Oh the joys of organizing things! I foresee many, many, many hours spent backing up my bookmark folder just in case... :)

Valentine's Day 2010

Matt and I were invited by our friends Dixie and Chris to go to the Celebrity Dairy in Silk Hope, NC.

Let the adventure begin!

We had a delicious meal: It started with Goat Cheese and appetizers (so yummy), then moved into a salad with mushroom crepes. The main course was herb lamb roast with wild rice pilaf and green beans. We also had spelt rolls with homemade honey butter (1/2 goat milk, 1/2 cow milk butter). It was finished off with a whole pear poached in wine with sweetened goat cheese. We also received truffles to take home with us :)

We were able to go into the goat barn and see all the "celebrities".

Dixie and Xena the Warrior Princess's baby...

This is what Dutch would look like if she was a goat! Hahaha, Matt and I thought that this was SO funny!

I also took 2 hilarious videos...

We waited like 10 minutes to see this happen... It was worth it!

Dixie really wanted the jumping goat!

Thanks for the great time guys! We loved it, I am sure we will go back to The Celebrity Dairy soon!

Surprise!

Matt called yesterday and told me that I needed to be in a dress and heels by 7:30pm. I had no idea what we were doing so I was driving back from Sanford and came home and got ready.

Matt came home and had a beautiful bouquet of daisies (my favorite). We got in the car and I still had no idea where we were going. So we are driving towards downtown and I start guessing, guessed right... Sullivans!

We had a great dinner and drove home in the beautiful snow. What a wonderful night! Thanks to all the "cupids" who helped Matt pull it off :)

Friday Friend 27

This week's Friday Friend is someone near and dear to my heart...

Bill Clinton

As most everyone who barely knows me is aware of, Bill Clinton is my hero. When I heard the news Thursday that Bill was taken to the hospital with "chest discomfort", I was heart broken. I received a lot of Facebook messages of people that had "thought of me" when they heard the news. No worries friends, Bill is Back! He is out of the hospital with 2 stints and will be back doing relief work for Haiti. Looks like rocking the Pimpin' like Clinton shirt Friday helped :) Yes, I do own a Clinton shirt, it has this very picture on it :)

Dinner Bell

Had a fun, easy, yummy dinner tonight! I took my own pictures with my phone but haven't uploaded them yet... but here is what I made. They are Matt's fav.

I did the top one, except I used a can of Manwich not spaghetti sauce. I also used my mega muffin tin for the first time and made BIG Bar-B-Cups.

Yum Yum Yum, comfort food :)

Well, here's another day we gotta make up! Geez! And they are calling for more winter weather this weekend.... ugh ugh ugh.

At least we got a lot done today, I feel good about all the work that I was able to do on this workday. I feel planned for the rest of this week and next... score!

Snow Day Monday

What a productive snow day! After sleeping in (yay), and hearing that Matt safely got to work, I had a little lunch and got busy. I completely finished Cindy's quilt, and made a cute cute cute baby shower gift. Can't post pictures of either due to the fact that the owner's have not seen them yet.

So as I was sewing away, my cell phone starts blowing up with text messages... I am like what in the world is going on? So I pick up the phone and it says, "2 hr delay tomorrow and school on Saturday" -Dixie. Excuse me? My eyes can't be reading this right, so I call her. It is true she says, get online and check the school webpage. And there it is, make up snow day Saturday, Feb. 6th.

So there you have it folks, I will be at school on Saturday.
